A delightful Spanish salad inspired from Rick Stein’s Spain TV series.
I find it to be an ideal accompaniment to BBQ meats, fish or just as a light lunch with a crunchy loaf.
Ingredients
- 2 x Ripe and Juicy large Salad Tomatoes (Sliced)
- 1 x White Salad Onion (Sliced)
- ½ jar Bartons Pickled Cauliflower Drizzle
- Extra Virgin Olive Oil
- Sprinkle Sea Salt Splash
- Sherry Vinegar
- ½ Fresh Green Chilli (optional)
Method
- Slice the tomatoes thinly and arrange in a dish and sprinkle with a little salt.
- Scatter the white sliced onions over the tomatoes.
- Add the pickled cauliflower florets on top of the onions to add a touch of sharpness and if you like a little heat, sprinkle a little diced fresh green chilli over the top.
- Drizzle with olive oil and a splash of red wine vinegar.
