Spanish Tomato Salad

with Barton’s Pickled Cauliflower

A delightful Spanish salad inspired from Rick Stein’s Spain TV series.

I find it to be an ideal accompaniment to BBQ meats, fish or just as a light lunch with a crunchy loaf.

Ingredients

  • 2 x Ripe and Juicy large Salad Tomatoes (Sliced)
  • 1 x White Salad Onion (Sliced)
  • ½ jar Bartons Pickled Cauliflower Drizzle
  • Extra Virgin Olive Oil
  • Sprinkle Sea Salt Splash
  • Sherry Vinegar
  • ½ Fresh Green Chilli (optional)

Method

  1. Slice the tomatoes thinly and arrange in a dish and sprinkle with a little salt.
  2. Scatter the white sliced onions over the tomatoes.
  3. Add the pickled cauliflower florets on top of the onions to add a touch of sharpness and if you like a little heat, sprinkle a little diced fresh green chilli over the top.
  4. Drizzle with olive oil and a splash of red wine vinegar.
